Peanut Butter Flapjacks


We love flapjacks and have been trialing a few recipes trying to get it just right! These are seriously good we've replaced half the butter with peanut butter so these are super chewy and moreish. You can also mix it up by using Cinnamon Raisin Peanut Butter with some extra raisins and cinnamon in the mix. We like to add shredded coconut but really you can add whatever you like. We used rolled oats but a mixture of rolled and jumbo is good too.  

Ingredients
  • 250g golden syrup
  • 150g Crunchy Peanut Butter
  • 150g butter
  • 180g soft brown sugar
  • 400g rolled oats
  • Up to 100g optional add ins - coconut, dried fruit, chocolate chips, nuts, seeds. 
  • 125g dark chocolate for decoration - optional
Method
  1. Preheat the oven to 180C/ 160C fan/ 350F.
  2. Grease and line a 20cm square baking tin.
  3. Melt the golden syrup, peanut butter, butter and sugar in a pan until completely dissolved.
  4. Add the oats and any other add ins and stir until fully combined.
  5. Press the mixture down into the tin
  6. Bake for 15-20 minutes, until the flapjacks are golden.
  7. Cool completely in the tin, then slice using a sharp knife.
  8. Melt the dark chocolate if using and drizzle over the flapjacks.
